Summer Watermelon Salad with Pesto

This is a fresh delicious salad that I think I tried once at a restaurant and loved the combination.  I’ve made my own version as I really have no idea what the original one was.  It’s super yummy, unique and a real crowd pleaser!  You will be sure to impress your guests, family and even yourself!  Try to get the freshest most local ingredients you can – ‘mealy’ tomatoes will ruin it so try to keep this as a summer treat!

* This recipe can also be done flat on a platter – instead of cutting in chunks, you make slices and stack tomato, watermelon, mint leaf then repeat- you then would drizzle the oil, lemon juice separately (can also drizzle some balsamic vinegar/glaze) then sprinkle the salt and pepper after – it’s STUNNING this way too

Ingredients

Servings 4

  • 1/4 watermelon
  • 4-6 multi-coloured tomatoes
  • 1 bunch fresh mint leaves
  • 1 cup Feta cheese
  • Extra Virgin Olive Oil
  • 1 fresh lemon
  • Maldon Salt to taste
  • Homemade pesto (with added olive oil to make it sizzle-able)

Method

Cut up the watermelon in 1/4 inch wedges or cubes. Match your tomatoes as well. I frequently do this salad on a platter therefore make do the tomatoes in slices and watermelon is triangles. Cut up the mint and basil and sprinkle it over the fruit (yes, tomatoes are fruit). Slice or crumble the feta and sprinkle it as well. Then squeeze 1/2 - 1 lemon over the platter, drizzle your great olive oil, salt and pepper. To be extra fancy you can drizzle some balsamic glaze over the whole thing - so pretty! Yes - that's it!
