I’m used to ordering this dish from upscale restaurants like Mortons. When I had sushi grade tuna on hand (this could also be made with sushi grade salmon – make sure its sushi grade & super fresh since you are eating raw fish) I looked up some recipes for Tuna Tower. I’ve modified the recipe to fit my taste preference and make it my own. Happy to share!

Ingredients

Fish Layer

  • Sushi grade Ahi Tuna or 10 oz. sushi grade salmon
  • 1 tsp. Sesame Oil
  • 1 tsp. Sriracha hot sauce or Cholula sauce
  • 1 1/2 tsp. Tamari soy sauce or low sodium soy sauce
  • 1/4 tbsp. grated fresh ginger (ginger is helpful to digest raw fish)
  • 1 tsp. rice vinegar

Vegetable Layer

  • 1/4 cup diced peeled English Cucumber
  • 1 medium avocado
  • 1/2 small mango diced
  • tsp.  toasted black sesame seeds (or white if that’s what you have)
  • 2 tsp. rice vinegar
  • Pickled ginger
  • Tortilla chips of your choice (about 1/4 bag)

Step by Step Instructions

Step 1

Combine the diced fish, sesame oil, hot sauce, soy sauce, ginger and rice vinegar in a bowl. You can adjust the soy sauce and hot sauce to your personal taste. Place bowl in the refrigerator to marinade while you prepare the vegetables.

Step 2

Peel the cucumber and dice into small pieces. Place in a bowl. Cut and dice the avocado and then add it to the bowl. Stir in the sesame seeds and vinegar coating the vegetables and mango well.

Step 3

Take a handful of tortilla chips and break into small pieces. You can do this in a ziplock bag just crunch them up.

Step 4

Get a can that you are willing to sacrifice the filling or use the next day (I used a can or chickpeas which I then just roasted). Remove the top or the can, empty the contents, rinse well and then remove the bottom of the can. This will create the cylinder you will use for assembly.

Step 5

Place the cylinder on the plate you will serve the tower on. Fill the can with 1/4 of the vegetable combo. Pat down well. Add a sprinkle of the tortilla chips. Fill the top fish layer and pat down well with the back of a spoon. Slowly and carefully remove the can and garnish the tower with a bit of pickled ginger, sprinkle with some more sesame seeds. You can add a tortilla chip on top or a couple on the side of the plate. Sometimes I then drizzle the plate with some balsamic glaze.
